Ingredients:

  • 2 stalks of celery
  • 1 large cucumber
  • 1 cup of fresh pineapple (or canned pineapple without added sugar if fresh is unavailable)
  • 1 handful of fresh parsley
  • 1 green apple (or red apple if preferred)
  • 1 piece of yacon (about 100-150 g)

Instructions:

  1. Prepare the Ingredients:
    • Wash all the ingredients thoroughly.
    • Cut the celery stalks into large pieces to make blending easier.
    • Peel the cucumber if it’s not organic and cut it into chunks.
    • Peel and cut the pineapple into small chunks.
    • Wash the parsley and remove the thicker stems.
    • Cut the apple into quarters, removing the core and seeds.
    • Peel the yacon and cut it into small pieces. If yacon is unavailable, you can omit it or substitute with more pineapple or apple.
  2. Blend:
    • Place all the ingredients into a high-speed blender.
    • Add a little water (about 1-2 cups, depending on the desired consistency) to help blend the ingredients smoothly.
    • Blend on high speed until you get a smooth and homogeneous mixture.
  3. Strain (Optional):
    • If you prefer a juice without pulp, you can strain the mixture using a fine mesh strainer or cheesecloth. This step is optional as the juice can also be enjoyed with the pulp for a thicker texture.
  4. Serve:
    • Pour the green juice into glasses with ice if you prefer it chilled.
    • You can garnish with a sprig of parsley or a cucumber slice on the rim of the glass for a special touch.
Additional Tips:
  • If the juice is too tangy or bitter, you can adjust the flavor by adding a bit more apple or pineapple.
  • For an extra touch of freshness, add a splash of lemon juice.
  • This juice is best enjoyed immediately to make the most of its nutrients but can be stored in the refrigerator for up to 24 hours.
