Ingredients:
- For the Tacos:
- 6 taco tortillas (corn or whole wheat)
- 1 ripe avocado
- 1 cup of fresh spinach (optional)
- 1 tablespoon olive oil
- Salt and pepper to taste
- For the Strawberry Salsa:
- 1 cup of fresh strawberries
- 1 tablespoon honey or agave syrup (optional)
- 1 teaspoon lemon juice
- 1 fresh mint leaf (optional, for garnish)
Instructions:
1. Prepare the Strawberry Salsa:
- Wash the strawberries thoroughly and remove the stems.
- Cut the strawberries into small pieces and place them in a bowl.
- If you prefer a sweeter salsa, add the honey or agave syrup and mix well.
- Add the lemon juice and mix again.
- Let the salsa sit for a few minutes to allow the flavors to meld. You can refrigerate it if you prefer it chilled.
2. Prepare the Tacos:
- Heat the taco tortillas in a skillet over medium heat for about 30 seconds on each side, until warm and slightly crispy.
- While the tortillas are heating, slice or cube the avocado.
- If using spinach, rinse and dry the leaves.
3. Assemble the Tacos:
- Lightly brush each warm tortilla with olive oil and season with salt and pepper to taste.
- Place a few spinach leaves (if using) in the center of each tortilla.
- Top with slices or cubes of avocado.
- Spoon a generous amount of strawberry salsa over the avocado.
4. Serve:
- Garnish with a fresh mint leaf if desired.
- Serve the tacos immediately, enjoying them while they are fresh.

- You can add other ingredients to your tacos if you like, such as thinly sliced red onion or crumbled feta cheese.
